Personally I use a couple of external hard drives and a program called Arconis True Image.  I make an image of the entire disk overnight.  If anything happens  then I can put in a new hard drive and put the image on it and be back up.  Being off-line might be great but it is slow, you are trusting somebody else to protect your data and you are moving every bit of information over the Internet. 

Places go down without warning, places get hacked and places sell information. 

I'll keep my backups in a fireproof safe and hope for the best.
