Soak in salt water overnight in the refrigerator. If pieces are two thick slice them to a size that will cook better. Rinse with cold water and feel for the steel shot while preparing and warn those eating to chew carefully. Season with salt and pepper. I like some dry powdered red pepper on mine. Flour and pan fry in a little oil covering with a lid to help hold heat and cook faster. Brown good on both sides and cook until it's done. |
