Subject: Sharing hot water with shop radiant floor heat?

north central kansas
Since it is too wet to get in the field, have been working at our new heated shop. Thinking of using a LP tankless water heater for radiant floor and also plumbing it for hot water to use in a shop sink and bathroom. I seen on a pex supply website they have set systems up this way. Anybody done this and any issues or concerns? The biggest concern I have heard from folks when I tell them I am planning on this route is " Aren't you afraid your lines could freeze if your LP runs out or something happens to your heater without antifreeze?" My response is that the floor will be a heat-sink for long enough until I could remedy that situation. Am I thinking right? We are only talking about a 44 x 56 shop. Most of what I have read recommends a tankless heater with a 7 GPM capacity.
