I had a similar problem with my iPhone7 then I realized that in picking-up the phone I was pressing the buttons on the left edge and specifically the one for lowering the volume.
Since this realization, I've been able to pay attention and have no more problems. I cannot move up to 16 version though, don't know IF that makes a difference.
