 north central Iowa, Hampton | I have a spot on an approach that has some slope. I park on a little uphill slope. I don't set the trailer brake--it'll set when the air drops. If it's wet / sloppy / and cold I sometimes even chock the tractor wheel and leave the tractor brakes un-set as well.
The next morning, build air, release brakes and see if it rolls backwards. If necessary, give it a little bump with reverse and see how she rolls.
If it rolls, I know the wheels are released.
