We have a 30" Frigidaire induction stove top with convection oven. It has worked flawlessly for the entire time we have owned it(~5 yrs) and we do cook daily. There is one large induction burner on that stove that would do the job for canning. Boiling water is sooooo fast with the right pot that works with induction. You can augment that capability with a separate pro-style portable induction burner. I just recently purchased the Duxtop professional portable induction burner for extra capacity like canning. I should mention that induction stoves are efficient but does require significant amperage at 220V when demands are high like boiling. For the portable unit they state that one should use a dedicated 15amp 120V circuit . That means no high amp drawing kitchen appliances used at the same time on that circuit.
