Wisconsin | Canned food is typically 2-3 years for an expiration date, so it's not going to be terribly accurate. They're putting a date out there that they would like to see it used by for best taste, texture, and vitamin content, as far as I know.
People always think it's not safe, safety has extremely little to do with it. If it's going to grow botulism, it will do it in six months, it won't matter that it sits for another six years after that. Wine does not get more alcoholic after the first few weeks, and canned food does not get unsafe with age. The exception is if the can started leaking a week ago, then it is getting more dangerous for a couple weeks, then getting putrid.
If it smells fine, low acid foods should be boiled and fruits will be safe out of the can. | |
