I think your schedule will be close. Nice thing about oats is they will still be soaking wet on the bottom before you rake, makes it easy to choose the moisture you want to bale at.
Heck I cut some Friday and baled Tuesday a couple weeks ago and they were around 40%. It was hot and dry everyday.
