We replaced the water pump on ours a couple years ago due to the same issues but our radiator wasn't plastic so didn't replace it. I suppose it's possible you had air in the system and the temp sender wasn't in fluid? Was the coolant still full after running for a while? Radiator hose could be coming apart inside? Probably should check with a temp gun.
