A 2014+ 740 (C13 machines) is probably equal to your 585.
The 8600 is now a wide body. A 7500 is probably more capacity then your 585.
The jump to a wide body is a big capacity increase. Couple that with the improvements in the new series machines and yes, a 8900 could very well double the capacity of your 585... it all depends on what your limiting factor is. It sounds like you are limited by engine horsepower.
I can easily run over 4k bph with my 2014 740 and 18r20” head... not sure where I would run out of power with a chopping head as I have never run one.
