Water could be your biggest issue. If you have access to city water maybe not so bad. Electric and coolers will be next. Disposal will also come into play. Address all those issues before even getting to the building. Zoning could be an issue if doing custom butchering. I don’t think 130k will get very far even with used equipment especially with the COVID frenzy.
