The way you described the cow to look, it sounds like lightning. You can tell if the cow's neck is stretched out, exposed tongue, bleeding from eyes, and hooves (outer shell) removed.

I didn't carry insurance on my cattle because you have to prove how they died, and that is too subjective. Sorry about the loss. I had a young bull do that last yr. It was a high dollar Changus that was right at 21 months old. I bought it and two weeks later it was dead due to a lightning strike.
