Grass hay is one of the best OM builders believe it or not. It is the root system that builds the OM. Small grains look like they should be builders but can actually reduce OM even if the straw is left in the field after harvest.
I harvested corn for silage and then planted beans in it the next year. I will try very hard to not do that again, unless I need to pick rocks! Very little or no residue makes for easier picking.
