Well corn and soybeans have been staple foods of civilizations for millennia. Tofu tacos aught to do the trick.
Like you said. Boiled grains are good. The local feed mill used to make muesli until the mid 90s.
If you do make corn into something. I may suggest boiling it with some wood ash. Look up nixtamalization.
