Did you check the rad and notice any coolant loss? Typical 5.7 gm from the 90's if so. Mechanic is right, intake manifold gaskets. It might be putting some antifreeze in there that is causing the occassional miss. I'm more for a sensor causing a hiccup every now and again but which one, good luck figureing that out.

Original oxygen sensor? Hold onto your shorts when you go to replace it and hear the price.

Its got to be burning or leaking the oil somewhere with that sort of consumption rate unless it's dropping it in the rad and I don't know how it would and not be noticed. You did crawl underneath and look around the bellhousing that the rear main didn't give way? 5 to 700 miles a quart is more than valve guides or a slightly dripping valvecover.
