My daughter also doesn't like pork rinds. My wife liked them from the beginning. I did not care for them much early on, but as I got used to more fat in my diet I have come to like them very much. Your tastes may change over time, or maybe not. There are some brands we do not like. Just like potato chips, some brands are better than others. You may have got a bad brand (for your tastes) or might have got some stale ones. I like the Bar-B-Q and "salt and black pepper" flavored ones, but you have to be careful of added sugar. If they list 1 gram of sugar per serving, I don't buy them. But flavored ones might be more palatable to you.

I don't worry about fat percentages. Within the low carb/keto community you will run across gurus that want high levels of fat, ones that want mostly plants, ones that are very strict and want you to measure ketones, yada, yada, yada. You can find all sorts of "advice". But the 80% of success of the diet is 1. reduce the carbohydrates and 2. replace those with something less fattening (namely protein and fat). 3. quit eating 4 or 5 or ten times a day and 4. cut out all the sugar as much as you can avoid. If you do those 4 things, you will gain at least 80% of the benefits of the diet. Then if you want that additional 20% bennefit you can start listening to the gurus and see if you can ferret a little more out of the diet. But don't let the 20% cause you to fail doing the 80%. Cut out the fast carbs and sugar and you are most of the way there. As far as fat percentage to protein, watch the video by Dr Benjamin Bikman (researcher) listed below. I will link it again here also. Don't fear protein, especially if you are over 40.

Strawberries, or any of the berries, are the least worse of the fruit you can eat. I will have a few strawberries here in a few minutes. They are the lowest in sugar content of fruits outside of an avocado (which is mostly fat).

The stuffed pepper I had tonight had ground beef and pork, cauliflower rice, onions, garlic and Italian seasoning for the filling.

Don't sweat the fat. Just focus on cutting the carbs waaaay down. Eat meaty, cheese, fatty snacks if you have to snack instead of carby snacks.
