We have targeted under 20 grams of carbs a day, but I would say at times it will be 30 and other times it might be 10 or less. On rare occasions get up to 50. We really don't count any more but the first couple months did do a lot of looking up different foods carb content and portion size. Once we had a good feel for things, we really never count them any more. Just watch the type of food we eat for carbs and watch the portion size. The more fatty protein foods we eat all we want. Salad pretty much too (make our own dressing so know it is low carb). You will lose more than 5 pounds in the first few days. But those first pounds are mostly water. I lost 90# in basically 6 months, so about 3.5# per week give or take was my rate. Now that I am at target weight (actually about 25-35 # under where I thought I might be able to get to when we started) I have a few more carbs in portion size some and I do eat a few berries that I did not before which have some carbs obviously. Some days I might get up to 50 now and other days still under 20. Here is a picture of the meal my wife just brought me. Stuffed peppers, boiled egg, pickled okra, dill pickles, sauerkraut and cabbage slaw. I will go back and eat double the amount of meat pictured, plus have a few nuts and 3-4 strawberries in addition.
