PEX won't have leaky solder joints. PeEX doesn't have restrictive tight bends. PEX is much easier to install. PEX won't corrode. PEX is pretty much the standard today I think. CPVC pretty well replaced copper twenty years ago. As far as the contractor who won't use PEX, I'd be wondering if he has accepted electric lights yet or if he still thinks gas lighting is the way to go.
