Great! Congratulations on the success.

Mashed potatoes with gravy were a staple with me. No more.

The cauliflower rice (can be bought in packets in the grocery store) is not a bad substitute. For someone who is used to eating potatoes is it going to taste as good??? Absolutely not. But I have found that since cutting out the sugar and carbs, my taste buds have changed. I like things I didn't used to care for or down right disliked. You will see a half piece of okra on that plate. Pickled okra to be precise. I abhorred okra my whole life. That is why I told the wife to only put a half piece on my plate to try. It was pretty good. I can eat that. My taste buds have changed.

A year ago if I had a plate with mashed potatoes and gravy on one side and cheesy cauliflower rice on the other, I would have pushed aside the cauliflower and ate the potatoes. But now I actually enjoy the cauliflower. There was not a bite on that plate that I did not enjoy. If potatoes would have been there would I have liked it? Darn right I would. But I wouldn't enjoy the 20 or 30 units of insulin I would have to inject to counteract it.

My blood glucose levels an hour after that meal, without any diabetic medication or exogenous insulin, will be around 135-140. A more conventional meal with a lot of carbs would be 200-250 at best and higher if it was really carby (if I didn't take any insulin to counteract it). That is enough reason for me to skip the mashed potatoes with gravy and go for the cheese cauliflower.

For a person that is metabolically healthy, they do not have to watch so closely. For me being diabetic for 25 or so years, I have to if I want to remain healthy.
