Kidney and liver functions. That is a biggie.

SIL "kind of" went on low carb but I will say she didn't fully understand it in the beginning and only did a fair job of limiting the carbs. Doctor told her she had a fatty liver. Was on the diet for a while after seeing how well her sister (my wife was doing). Went back to the doctor for more tests and she ask him about the fatty liver. He says "fatty liver, what are you talking about". He looked at the tests and she had no fatty liver. So only one of two conclusions: 1. one of the two tests were "wrong" or, 2. she reversed her fatty liver (which the doctor didn't believe was possible). This is first hand experience. I have read/heard of many such experiences of fatty liver reversal. When a person starts loosing weight, the body knows which fat is the dangerous and which is least. It will get rid of the fat in the liver, pancreas and organs first and then within the muscles before it starts on belly fat.

Even loosing a modest amount of weight can have tremendous health benefits. The trick is to keep it off. The trick to keeping it off is not feeling like being starved all the time (willpower only lasts so long for most people before they "fall off the diet wagon"). The trick to satiety and not being hungry all the time is to have enough fat and protein in the diet. Then with satiety a person can get rid of all the snacking in between meals which spikes insulin (keeps it high instead of it lowering between meals) which makes it impossible to loose weight. That is it in a nutshell. Eat two or three meals a day with no snacking in between and eat enough protein and fat at meal time to satisfy hunger. It really is that simple.
