These terms refer to how fast a carbohydrate food is absorbed into the bloodstream. The slower the better for anyone, particularly for a diabetic.
Tomato juice is listed as low on the glycemic index. Milk is too.
Protein foods, like red meat or chicken, are not rated by this index. The protein doesn't affect blood sugar, so they don't include them in the lists. The lists are only comparing sugars and starches like bread, pasta, candy, beans, vegetables, etc. | |
