Our 8' pits have at least another food depth in the pump out holes. We have an 8' and a 10' pump. The 8' won't get the pump empty, but the 10' will. The pump will work in a range of pit depths and also various heights (above ground level) of the pump out.
We use Doda pumps. They are very tough and (I think) a better value than Houle.
