usually 10-20 under engine temp. You could have a bypass valve sticking. Usually if its a sensor, they will stick. Unless it's bad in the 180 temp range. If you got a temp gun, aim at that line going to the oil cooler or that filter housing.
You could have also had a cooler plug or fail
My Agco's run around that 175-185 when I'm running in the spring on a 80 degree day.
