I'm sure someone who can tell more about this than me will respond but a question does come to mind. Was the old pump 110 or 220? You'd likely be well served to replace it with the same and make life easier. I'm not sure I understand what you're saying about the one hot wire. What does the breaker or fuse look like. I believe a double pole breaker (or fuse) on a single 110 leg will still yield you 220v power. My terminology is terrible so I hope this makes sense.
