Dabeegmon has it right. Just cut it at its worst point between high protein, low fiber vegetative stage and high energy, high fiber dough stage. You got the high fiber diluting the protein without the starch to dilute the fiber.
Sounds like you got it cured without rainfall, so that probably trumps all other considerations !
