Morton's tenderquick is the stuff I have used as per other recs. on here. It has the nitrates in it. takes a very small amount.

I dissolve it in water an inject in turkey an leave it set 24 hours before cooking. I does make a turkey quite edible. The smoking part does not get through the entire bird so the tender quick really makes smoking work good.
