The down fall is how rank it is. Protein is in direct correlation to age but it should all stall somewhere around 7-8% if it is still green. Frost won't affect the protein at first but will over time by weathering and leaf shatter when baling. Roll your cutter bar back if the ryegrass is already up and avoid it if you can for drydown.

Nitrates don't happen in rank hay and PA goes away in a hay bale.
