I remember a thread about lunches, and what kids eat. Just don't specifically recall saying what kids were eating. But, could very well be I said something about obesity being tied to what kids eat in school lunches. It does sound like what I would say. (lol.. didn't think anyone paid much attention to anything I've said/thought)  :-

It does stand to reason thou, kids shovel down basically "junk food" and their going to have obesity problems.

Far as the Peanut butter, you're right Peanut butter is an excellent source of protein. Unfortunately, for some reason kids are becoming more alergic to peanut butter. Friends of mine have a daughter so alergic, they have to send her to school with her own specific lunches. Even a food with a minute amount of peanut butter in it, or any eating utencil with any form of peanut butter on it and she comes into contact with it,, It's an emergency trip to the Emergency Room. Poor girl is deathly alergic to peanut butter in any form. (the parents have a list of foods that have peanut butter,, I had no idea so many different prepared foods have trace amounts of peanut butter in them.

So, with so many alergic kids I'm suprised there is peanut butter in any form offered at all in any schools. I believe plain old peanut butter was taken off most school menu's in this state, if I recall from the news.  

Good institutional cooks are hard to find. Should not be but seem's they are..??   Cooking in large quanities is not even like restruant cooking.  Large container cooking takes skill and knowledge.  Ingredients are not just time's 10-20 (whatever) some ingredients that are correct for 6-10 people,, just isn't the same when cooking for 2-300 or more.
