On our S67 with a 6 row 3000 head doing about the same 2000 BPH that you are, here's what we are doing. Rotor speed 290, concave 0.73, chaffer 19, sieve 15 I think, fan 4.3. Seems to work pretty good, looks like we've got about a bushel and a half loss, but most of that is coming from butt shelling at the head. Running a 6 row at 6mph requires pretty fast roll speed, which doesn't help butt shelling.
