This vid from the Palouse Hills of Washington state is pretty cool. With a team of horses like that, is the teamster controlling the whole herd or just a couple lead horses?
What is the guy with the steering wheel controlling ?
I assume to level the separator, a guy would do that manually ? 



The guy with the “steering wheel” is controlling header height.

There’s a lever to control the clutches to level the separator, you can see the guy operating that lever at the 3:35 mark in the video. Automatic leveler control was invented in the 40’s, and could be retrofitted to the old pull type combines.
