That sounds like a great combination of ideas.
I was going to suggest a gift certificate to a good restaurant but YOU and you spouse taking them out to dinner sounds even better and having a suggestion of a good operator to replace you would be icing on the cake but of course let them know it is only 1 option and maybe they have others in mind to take over too.
