From what I've head from those who do it, one of whom we get our meat from.
First needs to be a grass animal, there are a list of guide lines but the simplest one is legs no more that 1/3 of cow height.
As far as feed the more familiarity in the pasture/hay the better. To maintain good rate of gain through winter baleage is a great benefit.
Time slaughter so if possible the last 60 to 90 days are on growing pasture.
