North Central Texas | Who said anything about grinding an old cow. Cow kill plant makes as many steaks as it can. They just arent choice or prime. Doesn't matter if an animal is 2 or 10, they can all get the same marbling grade. In your case, you have a carcass that should be a C and not qualify for ch/pr but there can be a possibility due to maturity differences in breeds to have a known c make a b grade. If you wouldn't have had the high degree of marbling, your b would only qualify as a select. We sell lots of culls direct and the plant separates them by age for easier grading and product grouping. If I had a 7 year old get a choice grade, I would know there is a grader getting kickbacks. With a 4 year old, you start running the risk of a lower quality stringy product. Your longhorn needed all he could get though.
