There is an excellent book called Wheat Belly that does a very good job of explaining how wheat has been changed through breeding. To summarize about 100 pages, dwarf wheat (a mutation)was developed in the early 60s and had a very different genetic makeup to wheat prior to that. Basically, wheat has far more chromosomes than it had even 60 years ago, it’s pretty much a completely different plant. For years my wife has had a terrible problem with psoriasis until recently she developed a rash typically seen in people with celiac disease. She quit eating wheat and her rash went away. She’s 41.
