Central Kansas
We are trying to harvest one of last fall crops here in Central Ks....a few rooster pheasants for the table. I have picked them, scalded them, skined them, breasted them, tried to eat the legs, etc. Seems the 'breast is the best' so to speak and I remember one of our fellow posters (probably from So. Dakota) who described an easy way to remove the breast only by stepping on the wings and pulling on the legs. I don't want to screw up the only few birds we get so could someone refresh us all on this pheasant breast removal procedure? Might not be for everyone, but I would like to try it.
