Your point is well taken but even 20% more beans won't change the conclusion. That would just mean 1.5 beans per pod not 2.5. Given 50 bpa that's 3000 lbs or 0.62 lbs per plot. 1200 pods @ 2.5 beans per pod is 3000 beans per plot. 3000 beans per 0.62 lbs is 4839 seeds per lb. That's not soybeans that's bb's.
After sleeping on it overnight, I suspect that most of those counted pods never fill. For example, to get 2.5 beans per pod (something that seems reasonable based on personal observation) assuming 168,000 beans per bushel, 8.4 million beans per acre, that's 1736 beans per plot or 690 harvestable pods or 58% of countable pods.
Knowing what we know about how important the last month is to a soybean crop that suggest that counting pods in August might not be the best way to estimate the soybean crop size.
