Ones here for processing tomatoes aren't, have a small air compressor coupled with a love joy coupler to a hydraulic motor, and use a small air tank mounted on the frame for a reservoir with a glad hand off of that with a ball valve in it all mounted on the dolly. Works slick and is simple, 90psi is all you need to release.
