its a option that is paid for by the processor-a lot of times you will read ads that say angus beef or black angus beef-It is not cab- If I remember right the CAB is around 2cts a # to have stamped'
In short Crete the tax payer is not paying for it CAB is a brand that pays for that stamp

Unlike the mandatory inspection for safety, which is paid through government funding, Beef grading is an option paid for by the processing companies that request the service. The processing companies use the grading information to determine how each beef carcass is best used. Beef is graded for quality and yield. The grade of the beef and yield grade are stamped in several places on the carcass with an edible purple vegetable dye, Since grading is optional , not all beef sold in the United States is graded. Beef that has not been graded is known as "No Roll" because the rolling grading stamp is not applied to the exterior fat as is the case with graded beef.

Less then 2% of all beef produced in the USA gets the prime grade
Prime beef is sold to hotels and upscale restaurants-most of the cattle I produce goes to that market-the packer I sell to gets upset when the cattle I have doesn't fall into that spec. Most supermarkets handle choice or select
