My buyer points more to the increased carcass size of some of the Holstein coming out of lots that had normally been colored feeders. The Holstein when fed to long naturally gets too tall and at some kill plants rails are not high enough to handle the increased height. So then with a larger fed cattle supply from more cows and calves said Tyson and others did not feel the need to bother with the Holsteins any longer. I do not think this is the sole reason either. Think it is a whole slew of issues. I would not give as much credit to the CAB people as she did.

Your dead on also buckeyefarmer. Other issues include less red meat yield due to bigger bones on a carcass on a stein. Another thing is a lot of the offals aren't all salvageable due to being burnt up from being fed full feed for so long.
