My mother is 87 years old and has eaten polk salad all her life. Her method is to use only the small, tender leaves. She washes it, then boils it in water until thoroughly cooked. By that time the water will be saturated with the "juice." She then runs water in the pan to flush the greens until the water runs clear. Add salt and some pepper sauce and you have some gooooddd eating.
