Asphalt would be a horrible idea. As someone else pointed out there is a reason the old concrete cracked so pouring new concrete over the old will likely yield the same results in the future. I doubt you want to go to the expense of having someone dig it out and start over. If you are going to go to that much trouble you might just as well put a new building over the new floor. Is this primarily a woodworking shop? If you have no need for big doors and high ceilings you might be surprised what you could put up a nice little low sidewall workshop for. Condensation can be handled with a vapor barrier and proper venting and air movement. Your other option is the wood floor. An old corn crib is a haven for rats and mice and I hate the idea of putting a wood floor in there. It would be a real invitation for rodents. If you are confident that you don't have a rodent problem of any kind a wood floor is probably your path of least resistance. It won't be cheap if you do it right but it may very well be your path of least resistance and yield the best results over time.
