Either hire the new guy or buy a trimming chute to do them yourself.

I had a good trimming guy, but the cost was significant ($2000 per year). I bought a chute for $4500 and have been doing my own for the past couple years. I run every cow through the chute at dry off. Some cows need trimmed in between and I do them as needed. I am slow at trimming but can do about 3 per hour (the pro could do 6 per hour).
