On the air-purge-- we do it the "illegal" method; 15 pounds of water in a weighjar, and after the receiver jar is empty, we chase the milk through the filter and vertical pipe. When properly done, we've never had trouble with cryoscope tests. But an inspector caught me once doing it, and raised cane, saying "Never do that again, at least not when I'm around!" Something about adulterating milk by mixing water with it.
I had to wonder, did you spiff up the parlor just before this picture, or does it usually look that clean? Because that is cleaner than most any parlor I've been around.
