Sorry you're having to deal with this. It sucks that it will be through your best land.

Maybe the soil removal details can be specified in your agreement, such as the top 36" (or whatever depth) be placed on 1 side of the line, and the remaining that is dug out put on the other. It will be easier to put the soil back more like it was, and avoid mixing. Of course you'll have to be there the whole time to monitor the actual process. Maybe a soil consultant could assist in how to best replace the soil, based on your soil type and soil profile. Will the pipeline company pay you for your cost of dealing with the soil compaction to get the land back to producing like it was? If the ground is wet and ruts are cut, you'll have a real mess and lots of damage.

Watch out for various towers, valves, electric lines/poles, line marker posts, etc and any other objects that may be installed above ground. All of that must be clearly defined at the start, with definitions of what is allowable to add later.

Get an unmistakable definition of all restrictions that you will incur on the easement. Be sure you understand if there might be a set-back from the edge of the easement that prohibits building any structure, fuel tank placement, etc.

I would think the easement would be the boundary for all construction equipment, all vehicles, etc. If not, that needs to be clarified. For 1.5 miles across your land, you need the easement clearly marked so everyone stays on the easement.
