Subject: Viable corn seed maturity

Southeastern Alberta
I have a few acres of conventional OP corn that I would like to do some selection of cobs to see what I can come up with. At what stage is the seed viable for germination? A lot of seed corn harvest photos seem to have plants that are very green still.

Thanks.
