I have grown wheat at times, but I am close to I-80, so quite a ways south. I am organic too, so the economics are different. I have averaged around 60 bushels with a range from 40 last year with extreme lodging and disease from excessive rains, to 90 in 2009. The red clover works great if weed pressure is low and the wheat doesn't lodge.
Harvest is usually between the 10th and 20th of July, but humidity can often be a problem unless you can finish drying it in the bin.
Always better to get it in the ground in September than October, and expect it to die if it has ice sheeting in low areas due to a freeze after a mid winter thaw.
