A Mexican who works for me takes big batches of purslane and stuffs them into a big pot without any water and slowly puts the heat on. The water in the purslane steams the leaves and a foot of raw purslane becomes just a handful at the bottom. She adds onions and shredded pork and wraps the mix into a tortilla shell and Wow!, it's the best tasting stuff you can imagine. | |
