nw NC | Last year I had a Mexican family that wanted to buy some field corn in roasting ear (or just later stage), which they used to make tamale. They started picking corn and found some corn smut. Wow, were they excited about it. I knew that Mexicans ate corn smut, so I asked how they cooked it. Lady said "in frying pan with onions, garlic and hot peppers". Then they found some pigweed and were excited about it also. I asked how it was prepared . She said "in frying pan with onions, garlic and hot peppers" !! | |
