I do the chew test. Very accurate, all joking aside. I crunch it between my k9 tooth. It takes a little experience but a mushy chew = too wet. Semi-crunchy is ~17 and a good, splitting crunch is ~14 or dryer. We almost never run combine into field because we too are smaller farmers and dont wanna cut 10% of our crop testing moisture.
