Last I checked, there is no market for wheat in central Iowa, maybe not in most of Iowa. So if one produces wheat it has to be hauled more than 150 miles which begins to take away profits.

History indicates Iowa was a great state for wheat up until about 1895 when settlers moved into the Dakotas, Nebraska, and Kansas and wheat production left Iowa. My theory is that Iowa's higher humidity made an ideal climate for fungi in a day when there were no fungicides and that discouraged growing wheat.

I recall seeing an ISU extension bulletin on wheat in Iowa about 25 years ago and it said there were no varieties of winter wheat suitable for growing in Iowa.

I have known of small patches being grown just to have something to demonstrate a vintage combine on. Whether that proved profitable I don't know. Might have amounted to 40 acres in Story County.
